  1. Fiesta Pasta Salad

  3. 1 c. cooked small macaroni shells, chilled
  4. 1/2 c. diced red OR green bell pepper
  5. 1/2 c. thinly sliced scallions OR diced red onion
  6. 1 Tbsp mayonnaise
  7. 1 Tbsp.minced fresh cilantro (Chinese parsley) OR Italian (flat-leaf) parsley
  8. 1-1/2 tsp seeded and minced jalapeno pepper
  9. 1/2 tsp salt 
  10. 1/2 tsp. red wine vinegar
  11. 1/8 tsp chili powder
  12.  
  13. *Garnish: cilantro or Italian parsley sprig
  14.  
  15. In medium bowl combine all ingredients except garnish; cover with plastic wrap
  16. and refrigerate until chilled. Toss again just before serving and garnish with
  17. parsley.
